Chef, conservationist, and National Geographic Fellow Barton Seaver will be in town for a presentation at the Walton Arts Center beginning at 7 p.m. Monday, May 9.
Seaver is a graduate of the Culinary Institute of America who has dedicated his career to restoring the relationship that we have with our oceans. He believes that the choices we make for dinner directly impact the ocean and its ecosystems.
He is also the author of a new book, For Cod And Country, featuring recipes intended to illustrate the concept of ocean conservation through the dinner experience. Organized by season, the book is a full-color exploration of recipes showcasing a wide variety of fish caught at specific times of year combined with fresh vegetables and vibrant spices.
Seaver will give a one-hour presentation on the subject, followed by a Q&A and book signing. Tickets are $10, and can be purchased at waltonartscenter.org., or by calling the box office at 479-443-5600.
