A regional restaurant chain that specializes in breakfast foods other fare is still in the works in Fayetteville.

Kansas City area-based The Big Biscuit is still planning to open at 2985 N. College Ave., in the building formerly home to Hardee’s at the Fiesta Square shopping center. Company officials recently confirmed their continued plans to the Flyer.

Locals Terry and Aimee Sims, who operate the Dairy Queen franchises in Northwest Arkansas, have signed on as local franchise owners for the brand.

The Sims heard about Big Biscuit from family in the Kansas City area, according to a press release issued last week.

“They kept telling us we had to try it, so we decided to make the drive one weekend,” said Aimee Sims. “It was so worth it — Terry and I couldn’t stop talking about the food quality, portion sizes, and homestyle menu items. I think we ordered almost one of everything on our first trip.”

Big Biscuit was founded in 2000, and currently operates 25 locations in Kansas, Missouri and Oklahoma. The Fayetteville location would be the company’s first restaurant in Arkansas.

The restaurant serves breakfast and lunch daily from 6:30 a.m. until 2:30 p.m. The breakfast menu includes biscuits and gravy dishes, along with a handful of pancakes, waffles, and french toast platters, plus several options for omelets, ‘scram-bowls,’ and more. Lunch offerings include Black Angus burgers, 24-hour brined fried chicken dishes, salads, and others.

The company is hoping to be up and running at the Fayetteville location sometime in early 2024.
